Green Tomatoes

There are a number of ways to make this bitter, underripe tomato delicious and moist. Green tomatoes have a firm texture that stands up well to heat, so they soften and their sourness mellows as they cook. This Southern favorite is perfect for frying, most famously coated in cornmeal. They're also great for pickling, a good alternative to tart green apples in baking, or an ideal vegetable for making a bright, flavorful sauce.
