Usually only found in farmers markets, Brussels sprout stalks provide the freshest tasting sprouts available. This cruciferous vegetable is a staple during the holidays and is at its best in early fall and winter when frost and snow bring out its natural sugars. The purple variety is even sweeter than the green, having been crossed with a red cabbage to yield a unique flavor and striking appearance. To prepare, you can easily cut your sprouts off the stem using a paring knife, or you can even roast the entire stalk and "carve" at the table as you serve.
